A warm, hearty soup that blends crispy bacon, soft gnocchi, and sharp cheddar in a creamy broth.

- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Cook the bacon in a skillet until crispy. Drain, chop, and set aside.
- In a large pot, heat butter or oil over medium heat. Add diced onion and sliced carrots. Sauté until tender, about 5–7 minutes.
- Pour in the chicken broth and bring the pot to a gentle simmer. Stir occasionally.
- Lower the heat. Stir in the heavy cream or half-and-half. Add salt and pepper to taste.
- Gradually add the shredded cheddar, stirring until smooth and melted. Keep the heat low to avoid grainy cheese.
- Add the gnocchi to the simmering soup. Cook about 2 minutes, or until the gnocchi float and are tender.
- Stir in the chopped bacon. Taste and adjust seasoning if needed. Serve hot.
Notes
For less salt, use low-sodium broth and add salt at the end.
