Description

A warm, hearty soup that blends crispy bacon, soft gnocchi, and sharp cheddar in a creamy broth.


Ingredients

  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet until crispy. Drain, chop, and set aside.
  2. In a large pot, heat butter or oil over medium heat. Add diced onion and sliced carrots. Sauté until tender, about 5–7 minutes.
  3. Pour in the chicken broth and bring the pot to a gentle simmer. Stir occasionally.
  4. Lower the heat. Stir in the heavy cream or half-and-half. Add salt and pepper to taste.
  5. Gradually add the shredded cheddar, stirring until smooth and melted. Keep the heat low to avoid grainy cheese.
  6. Add the gnocchi to the simmering soup. Cook about 2 minutes, or until the gnocchi float and are tender.
  7. Stir in the chopped bacon. Taste and adjust seasoning if needed. Serve hot.

Notes

For less salt, use low-sodium broth and add salt at the end.
