Ingredients

  • 10 dark meat chicken pieces (drumsticks and thighs, trimmed of excess fat)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning blend
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. In a skillet, melt butter over medium heat.
  2. Add onions and sauté until fragrant, about 2 minutes.
  3. Add chopped parsley and garlic, followed by lemon juice and red pepper flakes.
  4. Add chicken stock and Parmesan cheese, mixing well, then stir in heavy cream.
  5. Bring to a simmer for a minute, then turn off the heat and let the sauce cool slightly.
  6. Season chicken pieces with salt, smoked paprika, and chicken seasoning, tossing well to combine.
  7. Pour sauce over chicken in a baking dish.
  8. Bake UNCOVERED at 375°F (190°C) for 1 hour and 45 minutes, flipping halfway through.
  9. Broil on the skin side until golden brown, basting in sauce to finish.

Notes

Don’t skip the resting time before serving; it allows the juices to redistribute in the chicken, making it more tender. You can swap out dark meat for boneless, skinless chicken breasts if you prefer a leaner option, but adjust cooking times accordingly.
