Ingredients

  • 2 chicken breasts
  • 1 cup mozzarella balls
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 4 cups baby spinach
  • 1/4 cup balsamic vinaigrette
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and olive oil. Bake for 25-30 minutes or until cooked through.
  3. In a large bowl, combine baby spinach, diced avocado, halved cherry tomatoes, and mozzarella balls.
