Description

A colorful and flavorful dish featuring tender chicken, mixed veggies, and a spicy-sweet sauce served over rice.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce: 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Cut the chicken into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown and cooked through (6-8 minutes).
  4. Mix together sauce ingredients in a small bowl: mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust to taste.
  5. Add mixed veggies to the skillet with the chicken and cook for an additional 2-3 minutes until just tender.
  6. Remove from heat, pour sauce over chicken and veggies, and stir to coat.
  7. Serve over rice, garnished with extra sriracha or chopped green onions as desired.

Notes

Make sure not to overcrowd the skillet when cooking the chicken for even browning. Feel free to customize the veggies. Use Greek yogurt instead of mayonnaise for a lower-calorie option.
