2 tbsp grass-fed unflavored gelatin
½ cup cool filtered water
1 ½ cups hot filtered water
2 tbsp fresh lemon juice
1 tsp raw honey or sugar-free sweetener (optional)
Pinch sea salt
Fresh mint leaves for garnish
Instructions
- Add gelatin to cool water and let it bloom for 2 minutes.
- Pour in hot (not boiling) water and stir until dissolved.
- Mix in lemon juice, sweetener, and salt.
- Pour into silicone molds or ramekins.
- Chill 2–3 hours until set.
- Garnish with mint before serving.
