- 12 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 3/4 cup shredded cheddar cheese
- 8 ounces beef steak, cubed
- 2 green onions, sliced thin
Instructions
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin thoroughly or use silicone liners.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined and slightly frothy.
- Gently fold in the cubed beef steak, sliced green onions, and 1/2 cup of shredded cheddar cheese into the egg mixture.
- Ladle the mixture into the prepared muffin cups, filling each about two-thirds to three-quarters full.
- Sprinkle the remaining 1/4 cup of shredded cheddar cheese evenly over the top of each muffin.
- Bake for 20-25 minutes, or until the edges are set, the centers are firm, and the cheese is melted and lightly golden. Let cool in the tin for 5-10 minutes before removing.
Notes
These muffins can be easily customized by swapping beef for sausage or adding different vegetables.
