Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 3/4 cup shredded cheddar cheese
  • 8 ounces beef steak, cubed
  • 2 green onions, sliced thin

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin thoroughly or use silicone liners.
  2. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined and slightly frothy.
  3. Gently fold in the cubed beef steak, sliced green onions, and 1/2 cup of shredded cheddar cheese into the egg mixture.
  4. Ladle the mixture into the prepared muffin cups, filling each about two-thirds to three-quarters full.
  5. Sprinkle the remaining 1/4 cup of shredded cheddar cheese evenly over the top of each muffin.
  6. Bake for 20-25 minutes, or until the edges are set, the centers are firm, and the cheese is melted and lightly golden. Let cool in the tin for 5-10 minutes before removing.

Notes

These muffins can be easily customized by swapping beef for sausage or adding different vegetables.
