Ingredients
- 1 lb lean ground bison
- 1 tsp Dijon mustard
- 1 tsp Diamond Crystal kosher salt (or ½ tsp any other salt)
- ½ tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried parsley
- ⅛ tsp cayenne pepper
- Avocado oil (for grilling or searing)
Instructions
- Mix the Ingredients :
In a large bowl, combine ground bison, Dijon mustard, salt, black pepper, onion powder, garlic powder, smoked paprika, parsley, and cayenne. Mix gently with your hands until just combined. - Form the Patties :
Divide the mixture into 4 equal portions. Form into patties about ¾ inch thick. Press a small indentation in the center of each to prevent puffing. Chill patties for 15–30 minutes. - Cook the Bison Burgers :
Preheat a skillet or grill to medium heat. Brush with avocado oil. Cook patties for 3–4 minutes per side (for medium-rare to medium), flipping once. Internal temperature should reach 135°F–145°F. - Rest and Serve :
Remove patties from heat and let them rest for 5 minutes before serving. Add toppings, sauces, and buns of choice.
