Instructions

  1. Mix the Ingredients :
    In a large bowl, combine ground bison, Dijon mustard, salt, black pepper, onion powder, garlic powder, smoked paprika, parsley, and cayenne. Mix gently with your hands until just combined.
  2. Form the Patties :
    Divide the mixture into 4 equal portions. Form into patties about ¾ inch thick. Press a small indentation in the center of each to prevent puffing. Chill patties for 15–30 minutes.
  3. Cook the Bison Burgers :
    Preheat a skillet or grill to medium heat. Brush with avocado oil. Cook patties for 3–4 minutes per side (for medium-rare to medium), flipping once. Internal temperature should reach 135°F–145°F.
  4. Rest and Serve :
    Remove patties from heat and let them rest for 5 minutes before serving. Add toppings, sauces, and buns of choice.
