Description

A hearty and comforting dish of black-eyed peas cooked with smoked turkey wings and spices, perfect for family gatherings.


Ingredients

  • 16 oz dried black-eyed peas (soaked overnight)
  • 34 smoked turkey wings
  • 1 onion (diced)
  • 2 bell peppers (diced)
  • 4 cloves garlic (minced)
  • 1 bulb roasted garlic
  • 6 cups chicken stock
  • 2 tbsp grapeseed oil
  • 1 tsp Bayou City Garlic Pepper
  • 1 tsp Bayou City All Purpose Seasoning
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Cover the dried black-eyed peas with water and let them soak overnight.
  2. Rinse the soaked black-eyed peas under cold water and pick out any debris. Set aside.
  3. In a large pot, heat grapeseed oil over medium heat. Sauté the chopped onions, bell peppers, and minced garlic until softened.
  4. Add the roasted garlic and let it cook for about 1 minute.
  5. Toss in the smoked turkey wings and sauté briefly to infuse the flavors.
  6. Stir in the Bayou City seasonings, smoked paprika, dried thyme, and the rinsed black-eyed peas. Mix well to coat the peas in the flavorful seasonings.
  7. Pour in the chicken stock, ensuring it covers the peas and turkey wings. Bring the mixture to a gentle boil.
  8. Reduce the heat to low, cover the pot with a lid, and let it simmer for about 90 minutes, stirring occasionally.
  9. Remove the cover and let it simmer for an additional 30 minutes or until the peas are tender. If you prefer a thicker consistency, mash some of the cooked peas against the side of the pot.
  10. Season with salt, black pepper, and cayenne pepper if desired. Adjust the flavors to your liking.
  11. Remove from heat and serve the black-eyed peas with smoked turkey wings hot, either on its own or over rice with cornbread.

Notes

Soak black-eyed peas overnight for better texture and flavor. Adjust spice level according to taste.
