Description

Hearty and flavorful Black Eyed Peas, perfect for family gatherings or a cozy dinner.


Ingredients

  • 20 oz Dried black-eyed peas
  • 3 cups Chicken broth
  • 1 whole Red pepper (diced)
  • 1 Green pepper (diced)
  • 3 celery stalks (diced)
  • 6 Garlic cloves (minced)
  • 1/2 Onion (diced)
  • 1 Turkey tail
  • 2 Turkey necks
  • 1 Turkey leg
  • 1 lb Bacon (chopped)
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Adobo
  • 1/2 tsp Maggi seasoning
  • 1/2 tsp Cajun seasoning
  • 1/8 tsp Red pepper flakes
  • 1 tsp All-purpose seasoning
  • 1 tsp Paprika
  • Salt and pepper to taste

Instructions

  1. Rinse the dried black-eyed peas under cold water and soak them overnight in a large bowl with water.
  2. In a large pot, combine the soaked peas and chicken broth. Bring to a boil over medium heat.
  3. Prepare the vegetables: dice red pepper, green pepper, celery, and onion; mince garlic cloves.
  4. Once the broth is boiling, add the diced vegetables, minced garlic, turkey tails, turkey necks, turkey leg, and chopped bacon to the pot.
  5. Season with onion powder, garlic powder, adobo, Maggi seasoning, cajun seasoning, red pepper flakes, and paprika.
  6. Lower the heat and let it simmer for 90 to 120 minutes until the peas are tender, stirring occasionally.
  7. Remove turkey pieces, shred the meat, and return to the pot. Mix well.
  8. Taste and adjust salt and pepper as needed before serving.

Notes

Soaking the peas overnight is key for tenderness. You can adjust the spice levels according to your taste.
