- 20 oz Dried black-eyed peas
- 3 cups Chicken broth
- 1 whole Red pepper (diced)
- 1 Green pepper (diced)
- 3 celery stalks (diced)
- 6 Garlic cloves (minced)
- 1/2 Onion (diced)
- 1 Turkey tail
- 2 Turkey necks
- 1 Turkey leg
- 1 lb Bacon (chopped)
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tsp Adobo
- 1/2 tsp Maggi seasoning
- 1/2 tsp Cajun seasoning
- 1/8 tsp Red pepper flakes
- 1 tsp All-purpose seasoning
- 1 tsp Paprika
- Salt and pepper to taste
Instructions
- Rinse the dried black-eyed peas under cold water and soak them overnight in a large bowl with water.
- In a large pot, combine the soaked peas and chicken broth. Bring to a boil over medium heat.
- Prepare the vegetables: dice red pepper, green pepper, celery, and onion; mince garlic cloves.
- Once the broth is boiling, add the diced vegetables, minced garlic, turkey tails, turkey necks, turkey leg, and chopped bacon to the pot.
- Season with onion powder, garlic powder, adobo, Maggi seasoning, cajun seasoning, red pepper flakes, and paprika.
- Lower the heat and let it simmer for 90 to 120 minutes until the peas are tender, stirring occasionally.
- Remove turkey pieces, shred the meat, and return to the pot. Mix well.
- Taste and adjust salt and pepper as needed before serving.
Notes
Soaking the peas overnight is key for tenderness. You can adjust the spice levels according to your taste.
