- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 4 oz cream cheese, softened
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with liners or spray with non-stick spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
- In another bowl, beat together milk, vegetable oil, and egg until well mixed.
- Pour the wet mixture into the dry mixture and stir gently until just combined (do not overmix).
- Fold in the softened cream cheese and fresh blueberries gently.
- Divide the batter among muffin cups, filling each about three-quarters full.
- Bake for 20-25 minutes, until a toothpick inserted comes out clean.
- Let cool in the pan for 5 minutes and then transfer to a wire rack to cool completely.
Notes
Serve warm with butter or alongside scrambled eggs.
