Description

Delightful muffins bursting with flavor, featuring sweet blueberries and creamy cheese.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with liners or spray with non-stick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, beat together milk, vegetable oil, and egg until well mixed.
  4. Pour the wet mixture into the dry mixture and stir gently until just combined (do not overmix).
  5. Fold in the softened cream cheese and fresh blueberries gently.
  6. Divide the batter among muffin cups, filling each about three-quarters full.
  7. Bake for 20-25 minutes, until a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes and then transfer to a wire rack to cool completely.
