Ingredients
Main Bowl
- 1 lb ground beef
- 2 tbsp olive oil
- 1 small yellow onion, diced
- 10 oz romaine lettuce, chopped
- 3 roma tomatoes, diced
- 1 cup pickles, diced (optional)
- 1 cup shredded yellow cheddar cheese
Sweet Potatoes
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- Salt to taste
Burger Bowl Sauce
- 1/3 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp pickle juice
- 1 tsp Worcestershire sauce
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Instructions
- Roast the Sweet Potatoes
Preheat oven to 425°F (220°C).
Toss diced sweet potatoes in olive oil and salt. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until crispy and golden. - Cook the Ground Beef
Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes.
Add ground beef and cook until browned. Drain any excess fat. Season with salt, pepper, and a splash of Worcestershire sauce (optional). - Make the Sauce
In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, Worcestershire sauce, paprika, garlic powder, and onion powder. Chill until ready to use. - Assemble the Burger Bowls
In each bowl, layer chopped romaine lettuce, roasted sweet potatoes, ground beef, diced tomatoes, pickles, and cheddar cheese.
Drizzle with burger sauce. Serve immediately.
