Description

A warm and comforting soup that blends the classic flavors of cabbage rolls without the fuss, featuring ground meat, cabbage, carrots, and tomatoes in a rich broth.


Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 head of cabbage, chopped
  • 2 carrots, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the ground beef or turkey. Cook and break it up until browned. Drain excess fat if needed.
  4. Stir in the chopped cabbage and diced carrots. Cook for 2–3 minutes to wilt the cabbage slightly.
  5. Add the diced tomatoes, broth, tomato paste, oregano, salt, and pepper. Stir to combine.
  6. Bring the soup to a simmer. Reduce heat and cook for 30–40 minutes until vegetables are tender.
  7. Taste and adjust salt and pepper as needed. Serve warm.

Notes

Serve with fresh parsley or dill for garnish. Add a spoonful of yogurt or drizzle olive oil for extra flavor.
