- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 1 head of cabbage, chopped
- 2 carrots, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the ground beef or turkey. Cook and break it up until browned. Drain excess fat if needed.
- Stir in the chopped cabbage and diced carrots. Cook for 2–3 minutes to wilt the cabbage slightly.
- Add the diced tomatoes, broth, tomato paste, oregano, salt, and pepper. Stir to combine.
- Bring the soup to a simmer. Reduce heat and cook for 30–40 minutes until vegetables are tender.
- Taste and adjust salt and pepper as needed. Serve warm.
Notes
Serve with fresh parsley or dill for garnish. Add a spoonful of yogurt or drizzle olive oil for extra flavor.
