- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 8 oz pasta (such as penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 bell pepper (sliced)
- 1 onion (sliced)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Parmesan cheese (for serving)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with Cajun seasoning and add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
- In the same skillet, add bell pepper, onion, and garlic. Sauté until soft, about 5 minutes.
- Pour in chicken broth and heavy cream, stir to combine. Simmer for a few minutes until slightly thickened.
- Add the cooked pasta and sliced chicken, tossing to coat in the sauce. Season with salt and pepper to taste.
- Serve topped with Parmesan cheese.
