Ingredients

  • 2 chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz pasta (such as penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with Cajun seasoning and add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  4. In the same skillet, add bell pepper, onion, and garlic. Sauté until soft, about 5 minutes.
  5. Pour in chicken broth and heavy cream, stir to combine. Simmer for a few minutes until slightly thickened.
  6. Add the cooked pasta and sliced chicken, tossing to coat in the sauce. Season with salt and pepper to taste.
  7. Serve topped with Parmesan cheese.
