- 1 pound chicken breast, diced
- 8 ounces pasta (such as penne or rotini)
- 8 ounces cream cheese
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
- Add the onion and bell pepper to the skillet, and sauté until softened.
- Stir in the cream cheese, chicken broth, Cajun seasoning, salt, and pepper. Mix until the sauce is creamy.
- Combine the cooked pasta with the chicken mixture and half of the shredded cheddar cheese.
- Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped parsley if desired before serving.
Notes
For added flavor, let the chicken marinate in Cajun seasoning for 30 minutes before cooking. Use any pasta shape you prefer, and consider adding cooked shrimp or sausage for a different protein.
