Description

This refreshing carrot ribbon salad is quick, healthy, and vibrant—made with shaved carrots, a zesty lemon dressing, and fresh herbs. Perfect as a light side or meal prep salad. Vegan, gluten-free, and ready in just 10 minutes!

Ingredients

🥕 3 large carrots

🍋 1 tablespoon fresh lemon juice (or lime juice)

🫒 2 tablespoons olive oil

🧂 Salt to taste

⚫ Pepper (black pepper – stylized as a dot)

🌿 2 tablespoons chopped fresh herbs (parsley, mint, or cilantro)

🌶️ Optional: ¼ teaspoon chili flakes or ½ red chili thinly sliced

Instructions

🧼 Wash & Peel: Wash and peel the carrots. Using a vegetable peeler, shave them lengthwise into thin, wide ribbons.

🥣 Mixing Bowl: Place the ribbons into a large mixing bowl.

🥄 Whisk Dressing: In a small bowl or jar, whisk together olive oil, lemon juice, honey (if using), salt, and pepper until well combined.

🫗 Pour & Toss: Pour the dressing over the carrot ribbons and gently toss to coat evenly.

🌿 Add Toppings: Add fresh herbs and any optional toppings (chili, seeds, feta). Toss lightly once more.

Rest: Let the salad sit for 5–10 minutes before serving to allow the flavors to meld.

🍽️ Serve: Serve chilled or at room temperature as a side dish or light appetizer.

Notes

📌Storage Tip: If not serving right away, store the carrots and dressing separately in airtight containers. Toss together just before serving to keep the ribbons crisp.

📌Texture Boost: For extra crunch, soak the shaved carrots in an ice bath for 5 minutes, then pat dry before dressing.

📌Diet-Friendly: This recipe is vegan and gluten-free. To make it Whole30 or keto-compliant, skip the sweetener and feta.

📌Make It a Meal: Add cooked quinoa, chickpeas, or grilled chicken to transform this into a light main course.

📌Carrot Substitutes: You can also use shaved cucumber, zucchini, or beets alongside carrots for a rainbow ribbon salad.
