Description

A fun and delicious twist on cheeseburgers and quesadillas with savory ground beef, melted cheese, and fresh toppings.


Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • ½ cup mayonnaise
  • 2 tablespoons onion, grated
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 2 teaspoons yellow mustard
  • 1 teaspoon white vinegar
  • ¼ teaspoon paprika
  • 4 burrito-sized flour tortillas
  • 16 slices cheddar cheese, thinly sliced
  • ½ cup onion, finely chopped
  • ½ cup dill pickles, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, combine mayonnaise, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika. Whisk until smooth and well blended. Cover and refrigerate until ready to use.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart into small crumbles until fully browned, about 5-7 minutes.
  3. Drain any excess grease from the skillet. Return the skillet to the heat and add salt, black pepper, garlic powder, and Worcestershire sauce. Stir well and then remove from heat.
  4. Lay the tortillas flat. Place 2 slices of cheese on one half of each tortilla. Divide the seasoned beef mixture among tortillas, placing it on top of the cheese. Top with equal amounts of chopped onions and pickles, then add 2 more slices of cheese. Fold each tortilla over.
  5. Wipe out the skillet or use a clean griddle. Heat over medium-high heat and add olive oil. Once the oil is hot, add the quesadillas. Cook for 2-3 minutes per side until golden brown and crispy, and the cheese is melted.
  6. Transfer the quesadillas to a cutting board and let rest for 1 minute. Cut each quesadilla into 2-3 triangular pieces. Serve immediately with the burger sauce on the side for dipping.
