- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp Worcestershire sauce
- Chopped green onions (for garnish)
Instructions
- Heat a large pot over medium heat. Add the ground beef and cook until browned. Drain excess grease.
- Add the diced onion and minced garlic to the pot. Sauté until the onion is soft and translucent, about 5 minutes.
- Pour in the beef broth and bring it to a boil.
- Add the diced potatoes, carrots, celery, oregano, salt, and pepper. Reduce the heat and simmer until the vegetables are tender, about 15–20 minutes.
- Stir in the shredded cheddar cheese, milk, and Worcestershire sauce. Mix until the cheese melts and the soup turns creamy.
- Serve the soup hot. Garnish with chopped green onions.
