- 1 pound ground beef
- 2 cups diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat. Add the ground beef and cook until browned.
- Drain excess fat from the pot.
- Add the chopped onion and minced garlic to the pot and cook until soft.
- Stir in the diced potatoes and pour in the beef broth. Bring to a boil.
- Lower the heat and simmer until the potatoes are tender, about 15–20 minutes.
- Stir in the heavy cream and add the shredded cheddar cheese, stirring until it melts.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and extra cheese if desired.
