- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional, for serving)

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and cut them in halves or quarters for even cooking.
- Slice the smoked sausage into 1/4-inch rounds.
- In a small bowl, mix the ranch seasoning, garlic powder, onion powder, and black pepper.
- Drizzle olive oil over the halved potatoes and sprinkle with half of the ranch seasoning mixture. Toss until coated.
- Line a baking sheet with parchment paper or lightly grease it.
- Spread the seasoned potatoes on the baking sheet in a single layer.
- Scatter the sliced smoked sausage over the potatoes.
- Roast in the oven for 35-40 minutes, stirring halfway through.
- After roasting, sprinkle the shredded cheddar cheese on top and return to the oven for an additional 5 minutes.
- Garnish with fresh parsley and serve hot with sour cream, if desired.
Notes
For extra crispiness, ensure potatoes are spread out in a single layer. Consider using a mix of your favorite cheeses.
