Description

Delicious chicken enchiladas made with tender shredded chicken, zesty enchilada sauce, and gooey cheese wrapped in soft tortillas.


Ingredients

  • 2 cups shredded chicken
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup sour cream (for serving)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken with 1 cup of enchilada sauce.
  3. On a flat tortilla, spoon some of the chicken mixture and add a sprinkle of cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish.
  4. Repeat with the remaining tortillas and filling.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, let cool for a few minutes, then serve topped with sour cream and garnished with cilantro.

Notes

For creamier enchiladas, mix a little sour cream into the chicken mixture. Experiment with different ingredients for variations like ground beef or black beans.
