Delicious chicken enchiladas made with tender shredded chicken, zesty enchilada sauce, and gooey cheese wrapped in soft tortillas.

- 2 cups shredded chicken
- 2 cups enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- 1/2 cup diced onions (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the shredded chicken with 1 cup of enchilada sauce.
- On a flat tortilla, spoon some of the chicken mixture and add a sprinkle of cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish.
- Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, then serve topped with sour cream and garnished with cilantro.
Notes
For creamier enchiladas, mix a little sour cream into the chicken mixture. Experiment with different ingredients for variations like ground beef or black beans.
