Description

A delicious twist on a classic dish that combines fried chicken and chicken-fried steak, featuring a crispy coating and rich homemade gravy.


Ingredients

  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 tablespoon hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt & pepper (for gravy)

Instructions

  1. Heat oil in a deep fryer or large pan to 325°F.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, whisk buttermilk, egg, and hot sauce together.
  4. Dredge each chicken breast in the flour mixture, then dip it into the egg mixture, and finally back into the flour. Press the flour onto the chicken to ensure it sticks well.
  5. Fry the chicken in batches for 3-5 minutes on each side until golden brown. Remove and drain on a paper towel-lined plate. Repeat with all the chicken.
  6. For the gravy, take 1/4 inch of reserved oil from frying and heat in a pan over medium-high. Stir in the flour until absorbed and cook for about 1 minute.
  7. Slowly add the milk, whisking to blend. Cook until thickened and season with salt and pepper to taste.
  8. Serve the gravy over individual pieces of chicken before eating.

Notes

For maximum crispiness, fry the chicken fresh rather than reheating. Store leftovers properly to maintain quality.
