- 1 tablespoon olive oil
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 cups celery, diced
- 2 cups carrots, diced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked chicken, shredded
- 1 package (16 ounces) potato gnocchi
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots. Cook until the vegetables soften, about 5 minutes.
- Stir in the Italian seasoning and pour in the chicken broth. Bring the soup to a boil.
- Lower the heat. Stir in the heavy cream, shredded chicken, and gnocchi. Simmer about 5 minutes, until the gnocchi is tender.
- Add the chopped spinach and cook for 2 more minutes.
- Taste and season with salt and pepper. Serve the soup warm.
Notes
Serve with grated Parmesan or a drizzle of olive oil and crusty bread or garlic toast for a fuller meal.
