Description

A warm, creamy soup filled with tender chicken and soft potato gnocchi, perfect for cozy family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 cups celery, diced
  • 2 cups carrots, diced
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 ounces) potato gnocchi
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots. Cook until the vegetables soften, about 5 minutes.
  2. Stir in the Italian seasoning and pour in the chicken broth. Bring the soup to a boil.
  3. Lower the heat. Stir in the heavy cream, shredded chicken, and gnocchi. Simmer about 5 minutes, until the gnocchi is tender.
  4. Add the chopped spinach and cook for 2 more minutes.
  5. Taste and season with salt and pepper. Serve the soup warm.

Notes

Serve with grated Parmesan or a drizzle of olive oil and crusty bread or garlic toast for a fuller meal.
