Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (9 oz) cheese tortellini
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery, cooking until they soften.
- Stir in the garlic and cook for another minute.
- Pour in the chicken broth and bring it to a boil.
- Add the shredded chicken, tortellini, spinach, and Italian seasoning.
- Simmer for about 10 minutes, until the tortellini is cooked.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese.
Notes
For a creamier soup, stir in a splash of cream just before serving.
