Description

A comforting blend of flavors with tender tortellini, fresh spinach, and shredded chicken in a rich broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, cooking until they soften.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the chicken broth and bring it to a boil.
  5. Add the shredded chicken, tortellini, spinach, and Italian seasoning.
  6. Simmer for about 10 minutes, until the tortellini is cooked.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with Parmesan cheese.

Notes

For a creamier soup, stir in a splash of cream just before serving.
