Description

Delightful chocolate and orange macarons that combine rich chocolate flavors with a bright zesty touch, perfect for special occasions or a sweet treat.


Ingredients

  • 4.6 oz icing (confectioners’) sugar
  • 4.6 oz almond meal
  • 0.7 oz Dutch-process cocoa powder
  • 1 fl oz water
  • 4.6 oz caster (superfine) sugar
  • 1.5 oz egg whites (A)
  • 1.7 oz egg whites (B)
  • Brown food colouring, optional
  • 12.3 oz good-quality dark chocolate, roughly chopped
  • 94.4 fl oz heavy cream
  • 1 tsp finely grated orange zest
  • 1 tsp vanilla bean paste
  • 0.07 oz sea salt

Instructions

  1. Prepare baking sheets lined with parchment paper.
  2. Sift together icing sugar, almond meal, and cocoa powder in a bowl.
  3. Heat water and caster sugar in a saucepan until it reaches 248°F (120°C).
  4. Beat egg whites (A) in a stand mixer until soft peaks form.
  5. Slowly pour the hot syrup into the egg whites while mixing until glossy and cooled.
  6. Gently fold in the almond mixture until smooth and flowing.
  7. Pipe small circles onto the baking sheets and let them rest for 30 minutes.
  8. Heat heavy cream in a saucepan until it simmers. Remove from heat.
  9. Add dark chocolate, orange zest, vanilla bean paste, and sea salt to the cream and stir until smooth. Cool in the refrigerator for about an hour.
  10. Store filled macarons in an airtight container; keep filling separate in the fridge until ready to use.
