Description

Delightful Chocolate Raspberry Cupcakes featuring rich chocolate flavor topped with luscious raspberry frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup raspberry chocolate ganache
  • 1 cup raspberry frosting
  • Fresh raspberries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, eggs, vanilla extract, and milk. Combine the wet and dry ingredients until just mixed.
  4. Fill the cupcake liners halfway with batter and add a teaspoon of raspberry chocolate ganache in the center. Top off with more batter to fill the liners about three-quarters full.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let them cool completely.
  6. Once cooled, frost with raspberry frosting and garnish with fresh raspberries.

Notes

Store cupcakes at room temperature in an airtight container for up to two days or in the fridge for about a week.
