- 1/4 cup brown sugar
- 1 cup powdered sugar for icing
- 2 tablespoons milk for icing
- 1/2 teaspoon vanilla extract for icing
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix together the brown sugar and cinnamon.
- Fill each muffin cup halfway with the muffin batter, sprinkle a bit of the cinnamon-sugar mix on top, and then add more batter until the cups are 2/3 full.
- Use a toothpick to swirl the batter gently.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- For the icing, mix powdered sugar, milk, and vanilla until smooth. Drizzle over warm muffins before serving.
Notes
For best texture, don’t overmix the batter; stir just until combined. Customize with nuts or chocolate chips for variation.
