Description

Delightful Coffee Cake Muffins made with warm flavors of cinnamon, sugar, and nuts, perfect for breakfast or snacking.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup streusel topping (mixture of flour, sugar, and butter)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg, milk, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. For the streusel topping, combine brown sugar, flour, and butter until crumbly. Add chopped nuts if desired.
  6. Fill each muffin cup about 2/3 full with batter, then sprinkle the streusel topping on each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.

Notes

Use room temperature ingredients for better mixing. Customize the streusel topping with your favorite nuts or spices.
