- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/2 cup chopped nuts (optional)
- 1/2 cup streusel topping (mixture of flour, sugar, and butter)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg, milk, and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- For the streusel topping, combine brown sugar, flour, and butter until crumbly. Add chopped nuts if desired.
- Fill each muffin cup about 2/3 full with batter, then sprinkle the streusel topping on each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
Notes
Use room temperature ingredients for better mixing. Customize the streusel topping with your favorite nuts or spices.
