1 whole rooster or 1 large chicken
4 ounces of bacon or lardons*
2 cups of full-bodied red wine
1 cup of chicken stock
1 large onion
2 carrots
3 garlic cloves
1 tablespoon tomato paste
1 bouquet garni
8 ounces mushrooms
2 tablespoons butter
