- 1 lb ground beef
- 1 lb ground pork
- 1 lb chicken breast, cubed
- 1 can kidney beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups beef broth
- 2 cups diced tomatoes (canned or fresh)
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef and ground pork over medium heat until fully cooked. Drain excess fat.
- Add the cubed chicken breast to the pot and cook until no longer pink.
- Stir in the onion, garlic, and bell pepper, cooking until softened.
- Add the kidney beans, black beans, corn, beef broth, diced tomatoes, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes.
- Serve hot and enjoy!
Notes
For a thicker stew, let it simmer slightly longer. Adjust seasoning to taste, and consider adding different vegetables for variation.
