Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound sausage, sliced or crumbled
  • 4 cups potatoes, diced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Cook until softened, about 3–4 minutes.
  2. Add the sausage to the pot. Cook until browned and cooked through.
  3. Stir in the diced potatoes and the chicken broth. Bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15–20 minutes.
  4. Stir in the heavy cream and shredded cheese. Heat until the cheese melts and the soup is smooth. Season with salt and pepper to taste.
  5. Serve the soup hot. Garnish with fresh parsley if you like.
