- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound sausage, sliced or crumbled
- 4 cups potatoes, diced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Cook until softened, about 3–4 minutes.
- Add the sausage to the pot. Cook until browned and cooked through.
- Stir in the diced potatoes and the chicken broth. Bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15–20 minutes.
- Stir in the heavy cream and shredded cheese. Heat until the cheese melts and the soup is smooth. Season with salt and pepper to taste.
- Serve the soup hot. Garnish with fresh parsley if you like.
Notes
Serve with crusty bread or a simple side salad for a complete meal. Can be stored in the fridge for 3–4 days or frozen for up to 3 months.
