Description

A rich and flavorful seafood bisque featuring crab and shrimp, perfect for impressing guests or enjoying a comforting meal.


Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, finely chopped
  • 1 small carrot, grated
  • 3 tablespoons all-purpose flour
  • 3 cups seafood stock or fish broth
  • 1 cup heavy cream
  • ½ cup dry white cooking wine or seafood stock (non-alcoholic)
  • 1 cup lump crab meat
  • 1 cup medium shrimp, peeled and deveined
  • ½ teaspoon smoked paprika
  • ½ teaspoon Old Bay seasoning
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh parsley, chopped
  • Paprika for sprinkling
  • Crusty bread or oyster crackers

Instructions

  1. In a large pot, melt the unsalted butter and olive oil over medium heat.
  2. Add the chopped onion, garlic, celery, and grated carrot. Sauté for about 5 minutes until the vegetables are soft.
  3. Stir in the flour and cook for 2 minutes to create a roux, which will thicken the bisque.
  4. Gradually pour in the seafood stock while stirring, making sure to avoid lumps.
  5. Allow the mixture to come to a simmer. Cook for about 10 minutes to let the flavors meld together.
  6. Add the heavy cream and white cooking wine or seafood stock, stirring well.
  7. Mix in the lump crab meat, shrimp, smoked paprika, Old Bay seasoning, and optional cayenne pepper. Cook until the shrimp are pink and cooked through, about 5 minutes.
  8. Taste and adjust the seasonings if needed. Remove from heat and let it sit for a few minutes.
  9. Ladle the bisque into bowls, sprinkle with fresh parsley and a dash of paprika. Serve with crusty bread or oyster crackers on the side.

Notes

Use fresh seafood for the best flavor. Adjust spice levels as desired. The bisque can be blended for a smoother texture.
