- 1/2 lb large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 1 large carrot, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/2 cup dry sherry
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, celery, and carrot; sauté until softened.
- Stir in garlic and cook for another minute.
- Sprinkle flour over vegetables and stir well to combine.
- Gradually add dry sherry, stirring to avoid lumps.
- Pour in broth or water as desired, letting the mixture come to a simmer.
- Add the crab meat and shrimp, cooking until the shrimp turns pink and the crab is heated through.
- Season to taste and serve warm.
Notes
For added flavor, garnish with fresh herbs like parsley or chives when serving. A slice of crusty bread or side salad pairs wonderfully with this bisque.
