- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces. Season with garlic powder, onion powder, salt, and pepper.
- Heat 1–2 tablespoons of oil in a large skillet over medium-high heat. Add the chicken. Cook until golden brown, about 5–7 minutes.
- Turn the heat to low. Add the cream cheese and chicken broth. Stir until smooth and creamy.
- Add the gnocchi and spinach. Cover the skillet. Simmer about 5–7 minutes, until the gnocchi are tender and the spinach wilts.
- Stir in the shredded cheddar cheese until melted and the sauce is smooth.
- Serve hot, garnished with extra cheese if desired.
Notes
For a lighter meal, serve a smaller portion with extra greens on the side. Leftovers can be reheated with a splash of broth or milk.
