Description

A rich, comforting one-pan meal pairing tender chicken with soft gnocchi in a creamy sauce, perfect for busy weeknights or cozy dinners.


Ingredients

  • 3–4 boneless, skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces. Season with garlic powder, onion powder, salt, and pepper.
  2. Heat 1–2 tablespoons of oil in a large skillet over medium-high heat. Add the chicken. Cook until golden brown, about 5–7 minutes.
  3. Turn the heat to low. Add the cream cheese and chicken broth. Stir until smooth and creamy.
  4. Add the gnocchi and spinach. Cover the skillet. Simmer about 5–7 minutes, until the gnocchi are tender and the spinach wilts.
  5. Stir in the shredded cheddar cheese until melted and the sauce is smooth.
  6. Serve hot, garnished with extra cheese if desired.

Notes

For a lighter meal, serve a smaller portion with extra greens on the side. Leftovers can be reheated with a splash of broth or milk.
