Description

A warm and simple soup combining soft gnocchi, garlic, and a rich cream base, perfect for comforting the whole family.


Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 package gnocchi
  • 1 cup spinach (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
  2. Pour in 4 cups vegetable broth and bring to a boil.
  3. Add the gnocchi and cook according to the package instructions, usually 2–3 minutes until they float to the top.
  4. Pour in 1 cup heavy cream and stir until combined.
  5. Add 1 cup spinach (if using) and cook until wilted. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese and with crusty bread on the side.

Notes

For a softer side, pair with air fryer garlic butter dinner rolls. Store leftovers in an airtight container for 3–4 days.
