A warm and simple soup combining soft gnocchi, garlic, and a rich cream base, perfect for comforting the whole family.
Ingredients

- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 package gnocchi
- 1 cup spinach (optional)
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
- Pour in 4 cups vegetable broth and bring to a boil.
- Add the gnocchi and cook according to the package instructions, usually 2–3 minutes until they float to the top.
- Pour in 1 cup heavy cream and stir until combined.
- Add 1 cup spinach (if using) and cook until wilted. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese and with crusty bread on the side.
Notes
For a softer side, pair with air fryer garlic butter dinner rolls. Store leftovers in an airtight container for 3–4 days.
