- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh thyme, chopped
- 4 large potatoes, peeled and cubed
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender. Drain and mash with butter, salt, and pepper.
- In a skillet, heat olive oil over medium heat. Add shrimp, garlic, and paprika; cook until shrimp are pink.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and thyme until thickened.
- Serve shrimp over mashed potatoes and drizzle with sauce.
Notes
For creamier mashed potatoes, use milk or cream. Feel free to add more garlic or toss in some veggies for extra flavor.
