- 1 onion (chopped)
- 3 cloves garlic (minced)
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 2 cups heavy cream
- 2 cups cooked lasagna noodles (broken)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup mozzarella cheese (shredded)
- 1/2 cup parmesan cheese (grated)
- 4 large bread bowls
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic and sauté until fragrant.
- Stir in the chicken broth, crushed tomatoes, and Italian seasoning. Bring to a boil.
- Reduce heat and stir in the heavy cream and broken lasagna noodles. Simmer for about 10-15 minutes until the noodles are tender.
- Season with salt and pepper to taste.
- To serve, ladle the soup into each bread bowl and top with mozzarella and parmesan cheese.
Notes
For a thicker soup, reduce the amount of broth. Try adding veggies like spinach or mushrooms for extra nutrition.
