  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Sear the chicken in the hot oil until golden brown, about 5-7 minutes on each side.
  3. While the chicken cooks, prepare the rice. In a pot, bring the chicken broth to a boil, then add the rice and 1/2 teaspoon of salt. Cover and simmer until the rice is tender, about 15-20 minutes.
  4. In the same skillet used for the chicken, melt the butter over medium heat. Whisk in the flour and cook for about a minute.
  5. Gradually whisk in the whole milk and chicken broth. Stir continuously until the sauce thickens.
  6. Add the garlic powder and thyme, then stir in the cheddar and Parmesan cheese until melted and smooth.
  7. Return the chicken to the skillet and spoon the creamy sauce over the chicken. Let it simmer until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Serve the chicken and sauce over the fluffy rice, garnished with fresh parsley.

Notes

For extra flavor, consider marinating the chicken beforehand. You can also add vegetables like peas or broccoli into the creamy sauce for added nutrition.
