Description

A warm, cozy soup featuring juicy tomatoes, tender cheese tortellini, and a touch of cream. Perfect for a chilly night or a quick family meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 28 oz canned diced tomatoes (with juices)
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • Fresh basil leaves, to taste, for garnish (optional)
  • Grated Parmesan cheese, to taste, for serving (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté for 3–4 minutes until soft and translucent.
  3. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  4. Pour in the canned diced tomatoes with their juices and the vegetable broth. Stir to combine.
  5. Add 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a boil.
  6. Reduce heat to a simmer. Add the cheese tortellini and cook for 5–7 minutes or according to package directions, until tender.
  7. Stir in 1 cup heavy cream and simmer for 3–5 minutes to let flavors meld.
  8. Taste and adjust seasoning. Serve hot with fresh basil and grated Parmesan if desired.

Notes

Use good quality canned tomatoes for best flavor. For a lighter version, use half-and-half or milk instead of heavy cream.
