Ingredients

- 1 lb boneless, skinless chicken breast
- 1 can white beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can green chilies
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the chicken and cook until browned.
- Stir in the green chilies, cumin, chili powder, and season with salt and pepper.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and let it simmer for about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add in the white beans and heavy cream, stirring to combine.
- Heat through and serve garnished with fresh cilantro.
Notes
Great served with tortilla chips, bread, or over rice. Add toppings like shredded cheese, avocado, or sour cream for extra flavor.
