Description

A warm and comforting twist on traditional chili with tender chicken, hearty beans, and a rich creaminess.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 can white beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the chicken and cook until browned.
  3. Stir in the green chilies, cumin, chili powder, and season with salt and pepper.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and let it simmer for about 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Add in the white beans and heavy cream, stirring to combine.
  8. Heat through and serve garnished with fresh cilantro.
