- 1 lb shredded chicken
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups cooked pasta (optional)
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine the shredded chicken, diced tomatoes, chicken broth, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream and Parmesan cheese.
- If using, add the cooked pasta and mix well.
- Serve hot, garnished with fresh parsley.
Notes
Use freshly grated Parmesan for best flavor. Adjust salt as needed, especially since Parmesan adds saltiness.
