Ingredients

- 1 pound black-eyed peas
- 8 slices of bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 bay leaf
Instructions
- Rinse and soak the black-eyed peas overnight in water. Drain the peas before using.
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pan.
- Sauté the onion and garlic in the bacon fat until soft.
- In a crockpot, combine the soaked black-eyed peas, sautéed onion and garlic, bacon, broth, salt, pepper, paprika, thyme, and bay leaf.
- Cook on low for 6-8 hours or until the peas are tender.
- Discard the bay leaf before serving.
Notes
For extra flavor, you can add diced ham or sausage. A vegetarian option can be made by skipping bacon and using vegetable broth.
