Description

A delicious and hearty dish perfect for gatherings or a cozy family dinner, packed with protein and fiber.


Ingredients

  • 1 pound black-eyed peas
  • 8 slices of bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. Rinse and soak the black-eyed peas overnight in water. Drain the peas before using.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pan.
  3. Sauté the onion and garlic in the bacon fat until soft.
  4. In a crockpot, combine the soaked black-eyed peas, sautéed onion and garlic, bacon, broth, salt, pepper, paprika, thyme, and bay leaf.
  5. Cook on low for 6-8 hours or until the peas are tender.
  6. Discard the bay leaf before serving.

Notes

For extra flavor, you can add diced ham or sausage. A vegetarian option can be made by skipping bacon and using vegetable broth.
