- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup peanut butter marshmallow fluff
- 1/2 cup creamy peanut butter
- 2 cups powdered sugar
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- In another bowl, combine melted butter, eggs, vanilla extract, and buttermilk. Mix well.
- Gradually add the wet ingredients to the dry ingredients and mix until well combined.
- Fill each cupcake liner halfway with batter. Add a spoonful of peanut butter marshmallow fluff in the center of each cupcake, then cover with more batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
- For the frosting, beat together creamy peanut butter and powdered sugar, adding milk until you reach the desired consistency.
- Frost each cooled cupcake with peanut butter frosting and enjoy!
Notes
Make sure your ingredients are at room temperature for better mixing. Don’t overmix the batter; mix just until combined for fluffier cupcakes.
