- 2 pounds boneless skinless chicken thighs (about 8 pieces)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
Instructions
- Remove chicken from the refrigerator 20 minutes before cooking. Pat the chicken completely dry with paper towels.
- Season both sides of the chicken thighs with salt. Wait for 2 minutes, then add the remaining spices: black pepper, garlic powder, smoked paprika, and onion powder.
- Preheat the oven to 400°F (200°C) with the rack in the center position.
- Brush a baking sheet with 1 tablespoon of olive oil. Arrange the chicken thighs on the sheet, leaving space between each piece. Drizzle with the remaining olive oil.
- Bake in the preheated oven for 18 minutes. Flip the chicken thighs over and bake for an additional 14 minutes.
- Check that the internal temperature reaches 175°F (75°C) at the thickest part of the chicken.
- Tent the chicken with foil and let it rest for 3 minutes before serving.
Notes
Patting the chicken dry helps it brown better during baking. Adjust spices to taste; try marinating for juicier results.
