Juicy and flavorful baked chicken thighs perfect for quick weeknight dinners or meal prep.


Ingredients

  • 2 pounds boneless skinless chicken thighs (about 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Instructions

  1. Remove chicken from the refrigerator 20 minutes before cooking. Pat the chicken completely dry with paper towels.
  2. Season both sides of the chicken thighs with salt. Wait for 2 minutes, then add the remaining spices: black pepper, garlic powder, smoked paprika, and onion powder.
  3. Preheat the oven to 400°F (200°C) with the rack in the center position.
  4. Brush a baking sheet with 1 tablespoon of olive oil. Arrange the chicken thighs on the sheet, leaving space between each piece. Drizzle with the remaining olive oil.
  5. Bake in the preheated oven for 18 minutes. Flip the chicken thighs over and bake for an additional 14 minutes.
  6. Check that the internal temperature reaches 175°F (75°C) at the thickest part of the chicken.
  7. Tent the chicken with foil and let it rest for 3 minutes before serving.

Notes

Patting the chicken dry helps it brown better during baking. Adjust spices to taste; try marinating for juicier results.
