- 2 pounds medium cabbage (outer leaves removed)
- 3 medium carrots (peeled and shredded)
- 1/2 cup fresh parsley leaves (loosely packed and coarsely chopped)
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard (or coarse ground mustard)
- 1 teaspoon celery seeds
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon fresh ground black pepper
- 1 to 2 teaspoons sugar or honey (optional)
Instructions
- Remove the outer leaves from the cabbage and chop it into small pieces.
- Peel and shred the carrots.
- In a large bowl, combine the cabbage, carrots, and parsley.
- In a separate bowl, mix the mayonnaise, apple cider vinegar, Dijon mustard, celery seeds, salt, pepper, and sugar or honey (if using).
- Pour the dressing over the cabbage mixture and stir until well combined.
- Taste and adjust seasoning if necessary.
Notes
For a thicker dressing, add a bit more mayonnaise. Use fresh ingredients for the best flavor.
