Description

A delightful, homemade creamy coleslaw dressing that adds a fresh and tangy flavor to your summer salads.


Ingredients

  • 2 pounds medium cabbage (outer leaves removed)
  • 3 medium carrots (peeled and shredded)
  • 1/2 cup fresh parsley leaves (loosely packed and coarsely chopped)
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard (or coarse ground mustard)
  • 1 teaspoon celery seeds
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 to 2 teaspoons sugar or honey (optional)

Instructions

  1. Remove the outer leaves from the cabbage and chop it into small pieces.
  2. Peel and shred the carrots.
  3. In a large bowl, combine the cabbage, carrots, and parsley.
  4. In a separate bowl, mix the mayonnaise, apple cider vinegar, Dijon mustard, celery seeds, salt, pepper, and sugar or honey (if using).
  5. Pour the dressing over the cabbage mixture and stir until well combined.
  6. Taste and adjust seasoning if necessary.

Notes

For a thicker dressing, add a bit more mayonnaise. Use fresh ingredients for the best flavor.
