Description

A comforting and kid-friendly lasagna soup that captures the flavors of classic lasagna without the hassle of layering.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, finely diced (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 4 cups low-sodium chicken or vegetable broth
  • 6 to 8 ounces broken lasagna noodles
  • 2 cups fresh spinach or 1 cup frozen spinach (optional)
  • 1 cup ricotta cheese
  • 1 to 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and carrot. Cook for 4–5 minutes until soft.
  3. Add garlic and cook for an additional 30 seconds until fragrant.
  4. Add ground turkey, breaking it up and cooking until no pink remains, about 6–8 minutes. Season with salt, pepper, oregano, and basil.
  5. Stir in crushed tomatoes and tomato sauce, mixing well.
  6. Pour in broth and bring to a simmer.
  7. Add broken lasagna noodles and simmer until tender, about 10–12 minutes, stirring occasionally to prevent sticking.
  8. If using spinach, stir it in during the last 2 minutes of cooking.
  9. Remove from heat and spoon ricotta in dollops. Sprinkle mozzarella and Parmesan on top, covering for 2–3 minutes to melt the cheese.
  10. Garnish with fresh basil or parsley and serve hot.

Notes

Brown the turkey well for better flavor. Stir often to prevent noodles from sticking. You can add extra veggies like spinach or bell pepper for added nutrients.
