Description

A delicious low carb casserole packed with chicken, vegetables, and cheese, perfect for busy weeknights or meal prep.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup heavy cream
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, broccoli, and cauliflower.
  3. In another bowl, whisk together the heavy cream, eggs, garlic powder, onion powder, salt, and pepper.
  4. Combine the chicken and vegetable mixture with the cream mixture. Stir well to coat everything.
  5. Pour the mixture into a greased baking dish.
  6. Top with shredded cheese.
  7. Bake in the oven for about 25-30 minutes or until the cheese is bubbly and golden brown.
