Description

Delicate French cookies that are beautiful, customizable, and delicious, perfect for any occasion.


Ingredients

Scale
  • 100 g super-fine almond flour
  • 65 g powdered sugar
  • 70 g egg whites (at room temperature)
  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (if desired)
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 3 ½ tablespoons milk
  • ½ cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, sift together the almond flour and powdered sugar. Set aside.
  3. In another bowl, beat the egg whites until foamy. Gradually add granulated sugar and cream of tartar. Continue to beat until stiff peaks form.
  4. Carefully fold in the almond flour mixture. Add gel food coloring if desired. Do not overmix.
  5. Pipe the mixture onto a baking sheet lined with parchment paper. Let them sit for about 30-60 minutes until a skin forms.
  6. Bake for 15-20 minutes. Let them cool completely before removing from the parchment.
  7. In a bowl, whisk egg yolks and granulated sugar until pale and fluffy.
  8. Gradually add milk and cook over low heat, stirring until thickened. Let it cool.
  9. Once cooled, mix in softened butter and vanilla extract until creamy.
  10. Pair the macaron shells by size. Spread or pipe the buttercream filling onto the flat side of one shell. Top it with another shell and gently press together.

Notes

For best results, use super-fine almond flour and make sure your egg whites are at room temperature. Let macarons rest after piping to develop their signature feet.
