Description

A delightful shrimp dish featuring a creamy sauce with sun-dried tomatoes and spinach, perfect for impressing your loved ones.


Ingredients

Scale
  • 1½ lbs shrimp (peeled, deveined + rinsed)
  • 1/2 tsp salt
  • Paprika + Italian herb blend
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • 1/2 cup white wine
  • 5 oz sun-dried tomatoes (drained + sliced)
  • 1â…“ cups half + half
  • Salt + pepper (to taste)
  • 1/2 cup grated parmesan cheese
  • 1 large handful baby spinach

Instructions

  1. Pat dry your shrimp with paper towels. Season with salt, paprika, and Italian herb blend.
  2. In a skillet, melt butter and olive oil over medium-high heat. Add shrimp and cook for 1-2 minutes on each side. Transfer to a plate and set aside.
  3. Add diced onion to the skillet and sauté for 3-4 minutes. If necessary, add more oil.
  4. Stir in minced garlic and cook for 30 seconds. Pour in white wine, add sun-dried tomatoes, and sauté for 1 minute.
  5. Stir in half and half and season with salt and pepper. Simmer to thicken the sauce.
  6. Remove from heat, add baby spinach and shrimp, and stir to coat and wilt the greens.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat gently on the stove, adding broth if needed.
