Description

A quick and healthy dish perfect for families, these mini meatloaves are made with lean ground turkey and can be customized to your liking.


Ingredients

  • 2 tablespoons olive oil – divided
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1 pound ground turkey (93/7)
  • 1 large egg – lightly beaten
  • 1/3 cup breadcrumbs
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon chili sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon Worcestershire sauce (for glaze)
  • Salt and pepper – to taste

Instructions

  1. Preheat the oven to 400°F and line a medium size baking sheet with parchment paper. Set aside.
  2. Heat a sauté pan to medium heat on the stovetop. Add one tablespoon of the oil to the pan. Heat it and add the diced bell peppers and onions, cooking until soft (about 3-4 minutes). Set aside to cool.
  3. In a large bowl, combine ground turkey, egg, breadcrumbs, ketchup, remaining oil, mustard, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix well but do not overmix. Add cooled veggies and gently incorporate.
  4. Form the mixture into 4-5 mini loaves (about 1/2 cup each), shaping each loaf to be about 4×3 inches. Place on the baking sheet, 2 inches apart.
  5. For the glaze, mix ketchup, chili sauce, maple syrup, and Worcestershire sauce in a bowl. Brush the glaze over each mini meatloaf.
  6. Bake for 20-25 minutes, ensuring the internal temperature reaches 165°F. Allow to rest for 5 minutes before serving.

Notes

Top with chopped parsley before serving. Excellent with sides like mashed potatoes or steamed vegetables.
