Description

A warm, simple bowl of comfort combining basic vegetables and pantry staples for a fresh taste.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, diced carrots, and diced celery; sauté until soft, about 5–7 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add diced zucchini and diced bell pepper; cook for another 5 minutes.
  5. Pour in vegetable broth and the can of diced tomatoes.
  6. Add dried thyme, dried basil, and salt and pepper to taste.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Stir in fresh spinach right before serving. Serve warm.

Notes

For a creamier version, blend part of the soup and return it to the pot.
